A Great Fall Dinner | Chicken Pie

2lbs boneless skinless chicken breast
1 lg carrot
… 1 celery stalk
1/2 of large white onion
5 T spoons of butter
1/4 C of whole wheat flour
2 C chicken broth
1 C of Rice milk
Salt & Pepper to taste
1/4 t Thyme
1 t lemon juice
1/3 C peas
1/2 C green beans
Boil Chicken, dice when done. Bake sweet potatoes (take your fork and poke holes over the potato to keep the skin from breaking) according to their size from 45 minutes to 1 1/2 hour with oven set on 400. You will want to wrap potatoes in foil and put them on to a pan because they will leak. Sute’ celery, carrot and onion with the butter for approximately 5-7 minutes and then add flour and cook for 1 minute on medium to high heat. Slowly add broth and milk stirring constantly. Cook until it thickens and add peas, green beans diced cooked chicken. Add Salt and Pepper to taste then add Thyme and Lemon juice. Cook until chicken an vegetables are heated.
Allow frozen puff pastries sheets to thaw for an hour cut them into shape or size wanted and bake according to package directions.
